Trifongo con ropa vieja

Ingredients

  • 1 ripe yellow plantain, peeled and sliced

  • 1 green plantain, peeled and sliced

  • 1/2 pds or 4 small pieces of frozen yucca, boiled and stems taken out

  • 6 garlic cloves

  • 2-3 tablespoons olive oil

  • Ropa vieja

  • Salt to taste


Instructions


Add your garlic, olive oil and a tsp of salt to a mortar and pestle and crush it for a few minutes until it becomes a yummy garlic-y paste.


Fry your ripe and green plantain slices at 350F. Until fork tender and soft. Add to a bowl with your boiled yucca and mash and stir until it all becomes one. To this now add your garlic mix/paste and stir. Now add a little bit of the caldo / juices from the ropa vieja) continue to mix and taste for salt and season accordingly. Add to a small bowl to get the shape and invert into a large plate. Make a hole in the center and add your ropa vieja on top! Garnish with cilantro and serve warm.
