Ingredients
1 1/2 pounds of pork loin cut linto arge cubes
3 bay leaves
1 tsp of salt
1 red bell pepper (sliced)
1 green bell pepper (sliced)
1 yellow onion (sliced)
2 tbsp of olive oil
1 head of garlic (minced)
1/2 tsp of all purpose adobo
1 packet of Sazon con achiote
1/3 tbsp of Sazon Completa
1 can of tomato sauce
2 cups of cooking liquid from the instant pot
1/2 cup of cooking wine
Instructions
To a pressure cooker or instant pot add your pork and bay leaves then cover with water. Set to high and cook for 40 min. Until tender. Take out your pork pieces and shred with two forks or your hands. Save the cooking liquid for later use.
To a cazuela / Dutch oven, add your olive oil, peppers, onion and garlic. Saute for a couple of minutes over medium heat. To the saucepan add your tomato sauce, sazon, adobo, water and cooking wine. Stir to combine. Add the shredded pork to the pan & mix it in. Taste for salt and seasonings. Adjust accordingly. Drop the heat to low and cover. Let this cook / simmer for 15 minutes. Serve over white rice.
