Ropa vieja is a traditional Cuban dish that is loved all around the world. The name "ropa vieja" means "old clothes" in Spanish, and the dish gets its name from its shredded beef, which resembles old clothes. The dish seems to have originated in the Canary Islands before making its way to Cuba via Spanish settlers. Today, ropa vieja is a staple dish in Cuban cuisine and is often served with rice and beans or plantains. As a very popular Cuban dish, it's no surprise that it's also on the menu at my restaurant. However, I've put my own twist on the recipe by making it in an Instant Pot, rather than using the classic pressure cooker that my mom used to use when making it at home. This recipe is sure to become a favorite in your home too.
Ingredients
1.25 Ibs of beef chuck under shoulder / flank
3 bay leaves
1 tsp of salt
1 red bellpepper (sliced)
1 green bellpepper (sliced)
1 yellow onion (Sliced)
2 tbsp of olive oil
1 head of garlic (minced)
1/2 tsp of all purpose adobo
1 packet of Sazon con achiote
2 tsp. of Sazon completa
8 oz. of tomato sauce
1/2 cups of reserved beef broth from instant pot
1/2 cup of dry white cooking wine
Instructions
To an instant pot add your beef, salt and bay leaves then cover with enough water that its fully submerged. Set to high pressure and cook for 1 hour.
To a dutch oven, add your olive oil, peppers, onion and garlic. Saute for a couple of minutes over medium heat until your onions are translucent.
To the sauté pan now add your tomato sauce, sazon, adobo, water and cooking wine. Stir to combine.
Remove the beef from the Instant pot and using your hands (or forks) shred the beef.
Add the shredded beef to the dutch oven & mix it in, drop the heat to low and cover.
Let this cook for 15 minutes.
