Ingredients
24 frozen sweet plantains
2 cups of shredded mozzarella cheese
2 cups of prepared picadillo (recipe found on my site)
Instructions
Place the frozen sweet plantains on a sheet pan and bake at 375° for 25 minutes
Remove from the oven, allow to cool and place in a food processor. Pulse on high for 2-3o until a smooth sweet plantain paste forms.
Grab about 1/3 cup of the sweet plantain masa and shape it into a disc. Place the disc into a greased muffin tin and use a small espresso cup or shot glass to form the cup.
Place about 1 tbsp of picadillo into the plantain cup and top with 1 tbsp of mozzarella. Over the mozzarella add another tablespoon of picadillo and finally cover with a second layer of mozzarella.
Place the muffin tin in the oven at 375° for 15 minutes. Set the oven to broil for 1-2 minutes then remove from the oven and enjoy!
