Ingredients
1 large red bell pepper, chopped
1 large green pepper, chopped
1 large onion, chopped
7 cloves of garlic, minced
3-4 tbsp. of olive oil
2 (8 oz.) cans of tomato sauce
1 cup of dry white cooking wine
2 packs of sazon con achiote
4 cups of chicken broth
7 chicken thighs
2 large potatoes, chopped
Salt & pepper to taste
Instructions
In a large Dutch oven over medium high heat make your sofrito by sautéing your bell peppers, onions and garlic in olive oil until translucent.
Add your chicken and stir. Let the chicken cook for a few minutes until it browns. Now add your tomato sauce, cooking wine, chicken broth, Sazon, potatoes, salt & pepper and bring to a boil then drop heat to medium low and cover. Simmer for 30-35 minutes until potatoes are fork tender and chicken is cooked through. Serve with white rice.
