Croquetas de pollo are a delicious and classic Cuban appetizer that can be made easily with leftover chicken you may have in your fridge. This is a great way to use up leftovers and create a tasty snack or appetizer that can be enjoyed anytime. These croquetas are easy to make and can be prepared in big batches and frozen until you're ready to enjoy them.
The combination of the creamy and flavorful chicken mixture encased and the crispy and crunchy outer shell makes these croquetas a favorite in my book. They are perfect for entertaining guests, as they can be made ahead of time and served as a finger food at your next party or gathering.
Ingredients
1lb of chicken (store bought rotisserie, shredded breast or leftovers you may have in the fridge)
3 tbsp. Butter
2 tbsp. Hot sauce
1/2 white onion
Handful of cilantro
1/2 tbsp. Sazón completa
Salt and pepper to taste
3 cloves of garlic
1/2 cup of milk
1/2 cup AP flour
For breading:
2 eggs
1 1/2 cup galleta molida or breadcrumbs
1 1/2 cup AP flour
Instructions
In your food processor, place your onion, cilantro & garlic then pulse until finely minced. Add this to your cazuela with 2-3 tbsp. Of olive oil.
Add the chicken to your food processor. Pulse until finely minced, should almost look like a paste.
Set your casuela with your onion, cilantro & garlic mix over medium heat and cook for 5min until cooked down. Add to this the sazón completa and butter. Mix to combine and then add in your chicken from the food processor. Also add in your hot sauce and then add in your milk and flour, mix and add your salt and pepper. Make sure it’s nice and seasoned to your liking. keep mixing until a thick paste forms.
Remove from the heat, cover with plastic wrap and place in the refrigerator for 1-2 hours.
Remove from the fridge and start forming your croquetas. Use about 1/3 cup of your ham mixture and roll them into little logs. Place the formed croquetas in the refrigerator for an hour.
Set up a dredging station and place your eggs, galleta molida and flour in different bowls.
Start by getting your croquetas and covering them with the flour. Then roll the croquetas in the eggs and finally cover the croquetas with galleta molida.
Transfer the croquetas to a tray and place them in the refrigerator overnight.
Set your frying oil to 350° and fry your croquetas for 2-4 minutes or until golden.
