One of my all time favorite appetizers....bolitas de yuca con queso! These tasty little yuca balls are filled with melted cheese and make the perfect bite-sized snack for any occasion. Made from boiled yuca and stuffed with a blend of cheese, these crispy treats are full of flavor and have a satisfying crunch that will keep you coming back for more. One of the best things about them is that they can be made ahead of time and stored until you're ready to serve them. This makes them the perfect appetizer for entertaining, as you can prepare them in advance and simply pop them in the fryer when your guests arrive.
Ingredients
1 1/2 pd. frozen yuca / cassava
2 cups mozzarella cheese
Salt to taste
3-4 tablespoons of olive oil
Vegetable / canola oil for frying
Instructions
Fill a Dutch oven half way with water and salt liberally. Add your frozen yuca and bring to a boil. Allow the yuca to cook until tender and soft about 20-25 min.
Drain the yuca and remove all of the cores from the yuca (the tough string in the center of the yuca) and place the drained yuca into a large bowl.
Using a potato masher, start mashing your yuca and gradually add in olive oil and salt. If it’s too dry, add a few tablespoons of warm water. Add in your cheese and mix together.
Using a small scoop or two spoons, form little balls with your yuca mixture rolling with your hands.
Place the formed balls in the refrigerator for 3-4 hours.
Fill a Dutch over half way with vegetable oil and bring to 350°. Begin frying your yuca balls, a few at a time until golden brown. Serve with your favorite dipping sauce.
